Low Carb Ground Turkey + Spaghetti Squash

INGREDIENTS
1 spaghetti squash, halved and seeds scooped
Olive oil
Salt, pepper & crushed pepper flakes to taste
2 lbs lean ground turkey
Salt, pepper & garlic powder to taste
1 cup no sugar added marinara
Grated parmesan

DIRECTIONS
Preheat oven to 425° F. Roast spaghetti squash halves (cut side down) for around 40 mins. 

While that’s cooking, add olive oil to a heavy saute pan and cook down the ground turkey until there’s no more pink. Season to taste, add marinara and then let it simmer on low (the longer the better. give it at least 10 mins or up to an hour). 

Once squash has cooked and cooled, fork the insides and then mix it with the ground turkey mixture. Top with parmesan and cook at 350° F for 20-30 mins until cheese has crisped up. 

To make ahead, complete all steps up to the final assembled bake. You can refrigerate or freeze at this point and cook as needed.
