Thia Turkey Lettuce WrapS

This is a great low-carb, quick dinner packed with flavor and a little heat!

INGREDIENTS
2 tbsp Sesame Oil
1 tbsp Garlic, minced
1-1/2 cups Carrots, shredded
1-1/2 Lbs Organic ground turkey
1/4 cup Tamari
Salt to taste
Radicchio or Red Cabbage, julienned

For the peanut sauce:
1/2 C Peanut Butter
1 T Mirin
1 T Sesame oil
1 t Rice vinegar
2 T Orange juice (or freshly juiced lime, if you have it)
Sriracha to taste

For the garnish:
Cilantro
Peanuts
Sesame seeds

DIRECTIONS
Add sesame oil to a heavy-bottomed pan and sauté garlic and carrots, just a couple of minutes. Add ground turkey, break it up and then top the pan so the mixture will cook faster.

While the turkey mixture is cooking, slice up the radicchio and mix up the peanut sauce. No special instructions for the sauce, just combine all and add as much heat as you like with the sriracha. You can also thin it as needed with water.

Continue to break up the brown turkey every five minutes or so and add Tamari and salt about halfway thru. When the turkey is fully cooked, remove the lid and simmer until most of the liquid has been absorbed. Taste for seasoning once more and add the radicchio.

Assemble on a sheet pan for a quick family-style dinner. Garnish with cilantro, peanuts, and sesame seeds.
