Love, love, love a true Cobb salad but here are few tips to lighten it up: Use darker, leafier greens for your base. Think butter lettuces, romaine, and spinach (iceberg sadly has little nutritional value)

INGREDIENTS
Turkey
Toasted pumpkin seeds
Eggs
Salt & pepper

DIRECTIONS
Saute sliced turkey instead of bacon.

Add crunch with toasted pumpkin seeds.

Eggs: Here’s how I cook them (aka, if you don’t like them jammy…) Cover eggs with water. Heat. Once water boils, turn heat off, cover with a lid and let sit for 10 mins. Drain hot water then add ice plus more water to your pot until eggs are cooled. Peel eggs and reveal perfectly pillowy yolks.

Toss with a balsamic vinaigrette rather than a cream-based dressing.
