Summer Salad
Blackberries, basil, avocado, lime ... add shrimp for some protein! And you have a great summer salad bursting with flavor and nutrition. This recipe is inspired by one from Genius Kitchen, the cookbook by @maxlugavere.
INGREDIENTS
Juice of 1 lime
1/2 cup blackberries, sliced in half
1/4 cup toasted pecan halves
1/4 cup shredded coconut, toasted
2 cups baby spinach, loosely packed
1/2 cup fresh basil leaves, roughly torn
1/2 avocado, cubed
2 tbsp extra-virgin olive oil
DIRECTIONS
In a large bowl, toss together the spinach and basil. Drizzle in the olive oil and lime juice and toss to combine. Add in blackberries, pecan halves, coconut, spinach, basil, and avocados.
