Spicy Sausage, Cauliflower + Kale Soup
INGREDIENTS
4 spicy sausage links, casing removed
1 head cauliflower, riced (fresh or frozen)
Olive oil
Smoked paprika
1 onion, finely chopped
2 cups kale
4 cups broth
Red pepper flakes for garnish
Salt & pepper
DIRECTIONS
Since the sausage is so flavorful on its own, your only duties here are to heat, blend and serve. This is a delicious substitute for chili or cream-based soup.
Break up and cook sausages in a drizzle of olive oil. Add onion to sausage mixture and continue to cook together until sausage is fully browned.
Add seasoned cauliflower to a sheet pan and roast on 400F until just browned. Alternatively, if using frozen riced cauliflower, take it directly to the stovetop instead with the same seasonings.
Once cooked through, add to a high-speed blender and combine with 3-4 cups of broth, until smooth and creamy.
Remove sausage from pan with a slotted spoon and discard grease. Return to heat and deglaze the pan with a little broth. Add cauliflower soup base to the pan, stir in kale and cook until just wilted and top with sausage and red pepper flakes.
