Pumpkin + Chocolate Chip Baked Oatmeal
This pumpkin and chocolate chip baked oatmeal can be whipped up in a blender in minutes, baked, and enjoyed for a decadent yet healthy(ish) breakfast the whole week!
INGREDIENTS
1-1/2 cup oats
1/2 cup pumpkin purée
2 eggs
3 tbsp maple syrup
1 tsp pumpkin pie spice
Pinch salt
1/4 tsp baking soda
5 tbsp milk
Chocolate chips
Flaky salt
DIRECTIONS
Blend all ingredients (except chocolate chips).
Pour batter into a parchment paper lined oven-safe baking dish and top with chocolate chips. Bake at 350°F for about 20 minutes. Top with flakey sea salt, and enjoy!
