SPicy pomegranate ginger paloma

A traditional Paloma cocktail consists of tequila, lime juice, and grapefruit soda. This is a spicy twist on an all-time favorite inspired by a recipe found in the Half Baked Harvest cookbook.

Who's ready for fruity spring cocktails?

INGREDIENTS
Spicy ginger syrup (recipe below)
½ cup honey
1 inch fresh ginger, sliced
½ tsp cayenne pepper
8 leaves fresh mint

For the Paloma:
1 cup pomegranate juice
1 cup grapefruit juice
1 cup tequila
1 cup ginger beer
Juice of 1-2 limes
2 tbsp spicy ginger syrup

DIRECTIONS
To make the spicy ginger syrup, bring ½ cup of water, the honey, ginger, and cayenne to a boil over high heat. Once boiling simmer, for 1-2 minutes and then remove from the heat. Add the mint, cover, and let sit for 10 minutes. Strain out the ginger and mint. Store in a glass jar in the fridge for up to 2 weeks.

Fill your glass with ice. Add the pomegranate juice, grapefruit juice, lime juice, spicy ginger syrup, and tequila. Stir to combine and then top with ginger beer.
