Vegan Mushroom stroganoff
What if I told you this recipe is entirely vegan and gluten-free?! This vegan mushroom stroganoff is a crowd-pleaser for veggie and meat lovers alike. The key is the mushrooms that give a hearty, meat-like texture to the dish.
INGREDIENTS
Pasta of choice (I used gluten-free nonoPASTA, available on Amazon)
Olive oil
4 cloves garlic, chopped fine
1 onion, chopped fine
(1) 10 oz crate of cremini mushrooms, sliced
1 cup vegetable broth
2 tbsp spicy dijon mustard
2 tbsp nutritional yeast
Salt & pepper
1 cup coconut milk
DIRECTIONS
Cook pasta according to directions. Heat a few turns of olive oil over a warm skillet. Add garlic and onions and saute. Add veg stock and stir.
Add mustard and nutritional yeast to the pan and finally the coconut milk. Taste and add salt and pepper if needed.
Add pasta, toss well to combine, and cook until all is heated through.
