Masala Simmered Shrimp & Chickpeas Over Organic Grains

A super quick weeknight dinner that’s healthy and FULL of flavor? Yes, please. This recipe is for my busy friends (or those that want a tasty dinner on the table in under 20 mins). I’m using a store-bought masala sauce and microwaveable grains to save time.

INGREDIENTS
1 jar @mayakaimalfoods Butter Masala Sauce
1 lb @butcherbox wild-caught gulf shrimp
1 can @edenfoods organic chickpeas
1/2 cup frozen peas
1 package @seedsofchange 7 grain blend
Garnish: fresh jalapeño, chopped small

DIRECTIONS
Preheat oven to 400°F. Roast shrimp for 15 mins on a parchment paper-lined sheet pan with a little olive oil, salt, and pepper. While that’s going, pour simmered sauce into a pan and add chickpeas. Let the mixture simmer for a bit and at the same time, microwave the rice. Next, add the shrimp to the mixture once it’s just cooked (don’t overcook, it will dry out and get rubbery), and finally add the peas. Once all has warmed through, check for seasoning and adjust if needed. Serve atop rice and garnish with jalapeño and/or cilantro.
