Love your gut salad

Gut health is all about reducing stress and consuming a diversity of plant foods. I’ll help you with the latter.

This salad looks like it has a ton of ingredients but they come together super quickly if you have a food processor to roughly chop them. I also used my favorite microwaveable quinoa from Ancient Harvest to make this super quick.

INGREDIENTS
2 cups spinach, rough chopped
1 cucumber, rough chopped
1 cup broccoli florets, rough chopped
1/2 red onion, rough chopped
1 cup quinoa, cooked

For the herby dressing:
*All to taste
Olive or Avocado oil
Lemon
Basil
Parsley
Mint
Slivered almonds
Garlic
Salt & Pepper

DIRECTIONS
Rough chop the salad ingredients then blend up a batch of the dressing (make as much as you like to last throughout the week) and enjoy. I like to top this salad with a few of the Salt & Vinegar Wonderful Pistachios
