Lemony Quinoa Salad
Lemony Quinoa Salad aka lunch or the perfect side!
INGREDIENTS
1 cup uncooked quinoa
2 cup frozen peas
½ cup freshly chopped herbs (I did rosemary and parsley)
½ cup slivered almonds, toasted
For the dressing:
⅓ cup lemon juice
⅓ cup olive oil
Salt to taste
Honey to taste
DIRECTIONS
Cook quinoa according to package directions. If you have time to make it the night before, refrigerate it and it will separate better when you’re ready to mix in the dressing.
Bring a pot of water to boil and then turn off the heat. Add the peas and cook until bright green. Toss the quinoa with the peas, herbs, and almonds.
Puree all the dressing ingredients in the food processor. Toss the dressing with the salad ingredients. Season generously with salt and pepper. Serve tossed with fresh baby spinach, on crackers, or just by itself!
