Kelp pad thai

INGREDIENTS
Carrots
Cabbage, julienned
Bok choy, sliced
Kelp Noodles
Scallions
Parsley
Lime
Pumpkin / Sunflower Seeds

For the peanut sauce:
2 Cloves garlic
1/2 cup Peanut butter 
1/2 cup Orange juice
1/4 cup Tamari 
1/4 cup Toasted sesame oil 
1 tbsp Honey 
Sriracha to taste

DIRECTIONS
If you can slice your veggies and mix up your sauce ahead of time, this meal comes together in under 15 minutes.

Sauté veggies in toasted sesame oil and turn continuously. Add a pinch of salt and the peanut sauce. Heat thru until mixture simmers. Remove from heat.

Cut kelp noodles and rinse them in water. Mix in some of the peanut sauce and then add the veggie mixture to the bowl. Garnish with lime, parsley, or cilantro and pumpkin and/or sunflower seeds. Enjoy!
