Kelp Noodle & Brazil Nut Pesto
Brazil nuts are nutritional powerhouses. They're particularly high in selenium, a mineral with potent antioxidant properties. INGREDIENTS
12 ounces kelp noodles
½ medium lemon
1 teaspoon salt, divided
½ cup extra-virgin olive oil
½ cup fresh basil leaves
1 cup Brazil nuts
1 teaspoon garlic powder
2 tablespoons nutritional yeast
DIRECTIONS
Place the kelp noodles in a bowl filled with water and squeeze the lemon half into the bowl, saving I teaspoon of lemon juice for the pesto. Add ½ teaspoon of the salt, stir lightly, and set aside for 30 minutes.
Combine the oil, basil, Brazil nuts, remaining ½ teaspoon salt, garlic powder, nutritional yeast, and reserved 1 teaspoon of lemon juice in a blender and pulse until coarsely chopped. Set aside. Drain the kelp noodles and pat dry with a paper towel. Toss the kelp noodles with the pesto and serve.
