Hearty Greens Greek Inspired Salad

INGREDIENTS
Dandelion greens
Romaine lettuce
Kalamata olives, chopped
Cucumber, chopped
Chickpeas
Asparagus, roasted
Pumpkin and sunflower seeds, toasted
For the dressing:
Juice of a lemon
Olive oil
Italian Seasoning
Salt
DIRECTIONS
Preheat oven to 375°F. Chop asparagus into 1” pieces. Roast on parchment paper with olive oil, garlic powder, salt, and pepper for 15 mins, turning halfway. Meanwhile, clean and chop fresh greens. Finally, combine lemon juice, olive oil, and salt and pepper to taste in a large mixing bowl. Add greens, olives, cucumber, chickpeas, and asparagus, and mix well. Top with seeds of choice for added crunch, and enjoy.
