Hearts of Palm ceviche
This recipe is inspired by Blue Zones Kitchen! Ceviche is a Peruvian dish where fresh fish is cured in lime juice and mixed with spices.
Instead of fish this recipe uses hearts of palm which mimics the meaty texture and takes to seasoning well.
Enjoy this recipe as a healthy appetizer or snack!
INGREDIENTS
1 (14 oz) can hearts of palm
1 sweet onion, quartered
½ bunch scallions
Pepperoncini to taste
Handful of parsley
Juice of 2 lemons
Salt & pepper to taste
DIRECTIONS
Combine all by pulsing in a food processor and enjoy with seed crackers or on a piece of Ezekiel bread.
