Copycat Sweetgreen harvest bowl

Make your own version of the Sweetgreen Harvest Bowl at home. It might even be a little tastier. This version is grain-free too.

INGREDIENTS
Roasted sweet potatoes
Shredded kale
Roasted chicken
Apples
Goat cheese
Roasted almonds

For the Balsamic Vinaigrette:
½ cup olive oil
½ cup balsamic vinegar
1 tbsp honey
1 tbsp Dijon mustard
4 cloves garlic
Salt & pepper

DIRECTIONS
Peel and dice the sweet potato. Season with olive oil, salt, and smoked paprika. Roast for 20 mins in a 400 F degree oven.

While that’s in the oven, remove the fibery stalks from the kale, tear it into pieces, then wash and spin it. Drizzle with olive oil and salt then massage with your hands until kale leaves have all started to break down and soften.

Next, toast the almonds, pull some rotisserie chicken and chop the apple.

Assemble and finish with goat cheese and a balsamic vinaigrette.
