Gut Healthy Pasta Dish
This gut-healthy pasta dish is gluten-free, vegan, and packed with adaptogens.
INGREDIENTS
1 bag nonoPASTA™ (gluten-free with added adaptogens - available on Amazon)
Olive oil
1 head bok choy, chopped (just about any greens would work)
3 large Tomatoes (Heirloom shown here)
Green Olives
Garlic powder
Salt
Crushed Red Pepper Flakes
DIRECTIONS
Bring a large pot of water to a rolling boil. While that’s coming to temp, heat olive oil in a pan and add chopped greens. Season with garlic powder and salt to taste. Let those cook down until just wilted. Meanwhile, rough chop tomatoes and olives.
Add pasta to boiling water with a couple generous pinches of salt. Test after 8 minutes, making sure not to overcook. Once pasta is done, pour it over a strainer and drizzle with olive oil so pasta doesn’t stick together. Once greens have cooked down, add fresh tomatoes and olives and stir to combine. Finally, add in the pasta and top with some crushed red pepper flakes.
