FODMAP Friendly pasta sauce

FODMAP foods are those that contain certain types of carbohydrates that include sugars that can cause symptoms in the digestive systems of susceptible individuals. Studies have shown eating a diet low in FODMAP-containing foods may reduce symptoms of IBS and other gastrointestinal conditions. This pasta sauce is FODMAP-diet friendly and inspired by a recipe I found in Fiber Fueled, a @nytimes best-selling cookbook by @theguthealthmd

INGREDIENTS
1 tbsp garlic-infused olive oil
3 carrots, finely chopped
1/2 cup fennel bulb, finely chopped
2 tbsp balsamic vinegar
1 tbsp tamari
2 tbsp tomato paste
2 tsp Italian seasoning
Pinch of cinnamon
8 oz extra firm tofu, pressed
One 14.5 oz can crushed tomatoes
1 cup Biome Broth
Salt and pepper to taste
Crushed red pepper flakes
1/2 cup fresh basil, chopped
12 oz cooked gluten-free pasta

DIRECTIONS
Heat the olive oil in a large saucepan over medium heat. Add in the carrots and fennel and saute until very well browned, 10-15 mins. While carrots are cooking, in a small bowl, whisk together the vinegar, tamari, tomato paste, Italian seasoning, and cinnamon. Add the tomato mixture to the carrots and deglaze, scraping up any browned bits at the bottom of the pan.

Reduce the heat to low and crumble in the tofu along with the tomatoes and broth. Simmer for at least 20 mins, allowing the mixture to thicken and come together. Season, adding in salt, pepper, and red pepper flakes to taste.
