Chocolate avocado brownies
Turns out avocados can walk like this!!!
INGREDIENTS
1 ripe avocado
¼ cup creamy peanut butter, plus more (optional) for topping
¼ cup plus 1 tablespoon pure maple syrup
2 large eggs
¾ cup coconut sugar
2 teaspoons pure vanilla extract
½ cup unsweetened cocoa powder or cacao powder
½ cup almond flour
1 teaspoon baking soda
¼ teaspoon kosher salt
Flaky sea salt or ice cream to top
DIRECTIONS
Preheat the oven to 350°F and either grease an 8-inch square cake pan and line it with parchment paper. In a high-speed blender, combine the avocado with the peanut butter, maple syrup, eggs, coconut sugar and vanilla. Blend until very smooth.
Add the cocoa powder, almond flour, baking soda and salt. Blend until the mixture is fully incorporated and smooth. Transfer the brownie batter to your prepared cake pan. Bake until the edges of the brownies begin to pull away slightly from the sides of the pan and a knife inserted in the center comes out clean, 25 to 30 minutes.
