AIR FRYER CHICKEN TENDERS

2 Ways! One with traditional panko and the other with gluten-free almond flour

INGREDIENTS
2 cups Bobs Red Mill almond flour
1 tsp Old Bay Seasoning
1 cup panko crumbs
2 Pete and Gerry’s eggs
2 chicken breasts
Avocado oil spray

DIRECTIONS
Set up bowls for dredging. Mix Old Bay seasoning into almond flour. Slice chicken into strips (or nuggets for kids). If you’re using traditional panko, coat the chicken in the flour, then the egg, and finally the panko. If you’re doing the tenders ‘naked,’ just coat in the egg then the almond flour. 

Once all strips are coated, spray the air fryer generously with avocado oil and place strips in the basket. Set timer for 10 mins at 400° F. You can also place a piece of parchment paper under the basket to catch any crumbs that fall through. 

Served here over a bed of arugula with a honey mustard vinaigrette.
