Chicken Breasts + Cauliflower
Earlier in the week, I had broken down a head of cauliflower and had cubed a few chicken breasts. With that work behind me, this full meal came together in less than 30 mins (and you know I loved the fact that it was relatively hands-off!) You can’t beat a good meal that doesn’t require much thought or babysitting.
INGREDIENTS
1 jar of your favorite simmer sauce (I used Watcharee Yellow Curry)
3 boneless, skinless chicken breasts
1 head of cauliflower, cut into florets
DIRECTIONS
Warm simmer sauce and add chicken and cauliflower to the pan. Cover and cook over low heat for 20 mins, then remove the lid and continue to cook for another 5 until chicken is cooked through and cauliflower is soft. Season as needed and plate with a side of @RightRice vegetable rice.
