Broccoli puttanesca
Often times you’ll hear health experts say that eating well isn’t always about removing things from your diet but instead adding in more health-supportive ingredients. Here’s a recipe that’s loaded up with broccoli but the broccoli is disguised in a delicious, no sugar added marinara sauce. This simple skillet meal comes together quickly and is loaded up with healthy veggies.
INGREDIENTS
1 head of broccoli
1/4 cup capers
1/2 cup olives, chopped
1 jar no sugar added marinara sauce
2-4 cod fillets
Salt & pepper to taste
DIRECTIONS
Preheat oven to 400°F. Pulse broccoli in a food processor until it’s the size of rice. Add it to a mixing bowl and combine it with the capers, olives and sauce. Mix well and transfer to an oven proof skillet. Nest cod fillets in the sauce and season with salt and pepper. Cook for 20 - 30 mins until fish has reached 145°F.
