Goat Cheese Stuffed Bacon Wrapped Dates with Rosemary Honey

INGREDIENTS
6 ounces crumbled goat cheese
24 plump Medjool dates
12 slices bacon, cut in half
1/3 cup honey
1 tbsp chopped fresh rosemary
1/4 tsp cayenne  
Salt & pepper

DIRECTIONS
Preheat oven to 400° F. Line a baking sheet with parchment paper. Par cook the bacon until it has firmed up, about 10 mins.

Split the dates in half lengthwise, don't cut the date all the way through. Remove pit and discard. Stuff each date with goat cheese. Wrap each date with bacon and repeat with the remaining dates.

In a small bowl, combine the honey, rosemary, cayenne, and a pinch each of salt and pepper. Evenly drizzle 1/2 the honey over the dates. ***You can do all up to this step a day or so in advance if you want to free up time the day you’re serving.***

Transfer to the oven and bake for 10-15 mins, until bacon is crisp. Serve warm or room temp.
