Air Fried Artichoke Salad w/ Parmesan Dressing
A salad that eats like a meal. We love that. This recipe, adapted by Kat Can Cook, is for every hungry lady!
INGREDIENTS
1 can artichoke hearts
1 lb brussels sprouts
4 celery stalks
2-3 green onions
1 can white beans
Parsley
For the vinaigrette:
Olive oil
Dijon mustard
Shallot
Juice of 1 lemon
1 tsp honey
Salt & Pepper
DIRECTIONS
Drizzle olive oil and salt on artichoke hearts and air fry at 400°F for 10 mins. While that’s going, shred (or hand chop) the Brussels sprouts, celery, and green onion. Mix in crispy artichoke hearts, white beans, and parsley. Combine all vinaigrette ingredients in a high-speed blender to taste and dress the salad.
