Air Fried Artichoke Salad
INGREDIENTS
1 can artichoke hearts
1 lb brussels sprouts
4 celery stalks
2-3 green onions
1 can white beans
Parsley
For the vinaigrette:
Olive oil
Dijon mustard
Shallot
Juice of 1 lemon
1 tsp honey
Nutritional Yeast
Salt & Pepper
DIRECTIONS
Drizzle olive oil and salt on artichoke hearts and air fry at 400 for 8 mins. While that’s going, shred (or hand chop) the Brussels sprouts, celery, and green onion. Mix in crispy artichoke hearts, white beans, and parsley. Combine all vinaigrette ingredients in a high-speed blender to taste and dress the salad.
